I would rather recommend that you continue to explore the Ahlul Bayt School of Thought, and then make your decision as to which school of thought you are going to adopt, then commit to it. Should you pick and choose various beliefs and practices from different madhahib, this will do nothing but confuse you. On what basis and criterion will you follow in what to adopt, and from which madhhab?

If one was to do this, they will end up creating their own madhhab. This is why studying and following evidence would be the best approach.

Is it allowed for my 11-year-old son, who recently reverted to Islam, to eat non-Halal chicken in our remote Irish town where Halal options are scarce and costly and also because he has dietary restrictions due to allergies?

I wanted to add that it is very nice of you to take the trouble to look into what he should or should not be eating, and he is fortunate to have a supportive parent. I do sympathize with the dietary restrictions and allergies.

If it is available and affordable, and if you have storage space and can take delivery at home, halal meat can sometimes be purchased online. You may have already looked into that, but just putting it out there!

If he is still non-baligh, non-mukallaf, he can eat it, but I would definitely not recommend such a thing. We believe that non-halal food has a deep impact on the human spirit and mind, and even physical impact. Try to find alternatives for him, without compromising, and instill in him the importance of halal food, and sacrifices a Muslim makes for the sake of his/her religion and obedience to Almighty God who put all these laws and rulings for reasons that will benefit us.

Congratulations on your proposal. If he meets the right requirements for a spouse, and there is compatibility, and families are happy, go ahead.

No, there are no restrictions, other than the basic shar'i matters, like halal food, no alcohol, etc. Besides this, you and him can visit them in Christmas, and be with them, like any other family.

Is a person born to non-believers and later converting to Shia Islam considered illegitimate if their parents did not have a formal marriage due to the societal norms in their community?

The Hadeeth from Imam Jafar Al-Sadiq (AS) says: Every community who differentiate between marriage and fornication, their marriage is lawful. كل قوم يعرفون النكاح من السفاح فنكاحهم جائز . (Al-Tahtheeb; 7:475).

The marriage between non Muslim parents according to their society is valid and you are not an illegitimate.

Do all sins, including major sins like Zina, black magic, or stealing, get automatically forgiven upon conversion to Islam?

Sins which were between you and Allah and do not involve rights of others will be forgiven on becoming a Muslim, but sins involving rights of other need giving back their rights to others, either themselves, and if they are dead then to their inheritors.
